- 1 small fennel bulb, thinly sliced (reserve fronds for garnish)
- 1 orange, segmented
- 1 grapefruit, segmented
- 4 cups mixed baby greens (e.g., arugula, spinach, or butter lettuce)
- ¼ small red onion, thinly sliced
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon white wine vinegar or champagne vinegar
- 1 teaspoon honey or maple syrup
- Salt and freshly ground black pepper, to taste
