  • Ingredients:

    • 4 oz. smoked wild Alaska black cod, flaked into bite-sized pieces
    • 1 small fennel bulb, thinly sliced (reserve fronds for garnish)
    • 1 orange, segmented
    • 1 grapefruit, segmented
    • 4 cups mixed baby greens (e.g., arugula, spinach, or butter lettuce)
    • ¼ small red onion, thinly sliced
    • 2 tablespoons extra-virgin olive oil
    • 1 tablespoon white wine vinegar or champagne vinegar
    • 1 teaspoon honey or maple syrup
    • Salt and freshly ground black pepper, to taste
  • Instructions:

    1. In a small bowl, whisk together olive oil, vinegar, honey, salt, and pepper until emulsified. Set aside.
