Helpful Information for Your Catch
How can I get the most out of my catch?
Many customers love keeping their premium fillets raw — but that doesn’t mean the rest of your fish has to go to waste. Collars, bellies, and tail pieces make incredible smoked products, rich with flavor and perfect for dips, snacks, and gifting. By choosing to smoke these cuts, you get more variety from your catch and a full-circle taste of your time on the water.
What happens to my fish after drop-off?
Once you drop off your catch, we tag, weigh, and label it under your name — then it stays completely separate from every other customer’s fish. From filleting and trimming to smoking or vacuum-sealing, each order is handled start to finish by our team with care and precision. You’ll always get your exact fish back, packed, labeled, and ready to enjoy.
What’s the best way to store or thaw my fish once it’s home?
Keep your vacuum-sealed portions frozen solid until you’re ready to use them. For the best texture and flavor, thaw slowly in the refrigerator overnight — never in hot water or the microwave. For safety and freshness, cut open the seal before thawing to allow air in. Once thawed, enjoy within a few days and avoid refreezing for the highest quality.
Why choose Kodiak Island Smokehouse for processing?
Because every fish here is treated like it matters — because it does. We’re a small, local team who knows what it means to catch something worth remembering. From HACCP-level handling to hand-labeled smoked portions, we make sure your fish is processed with skill, care, and a touch of pride from Kodiak.
