Fresh horseradish isn’t something we usually reach for with seafood—but after being gifted a homemade jar from a customer, it felt like something worth exploring. This is one of the ways it found its place.

Here, it’s blended into a honey and miso glaze that caramelizes over rich black cod, creating a glossy, savory finish with just enough brightness to balance each bite.

  • Ingredients:

    Fish:

    Glaze:

    • 2 tbsp honey
    • 2 tsp prepared horseradish (adjust to taste)
    • 2 tsp Dijon mustard
    • 3 tsp fresh lemon juice
    • 3–4 tsp miso paste (white or yellow)
  • Instructions:

    1. Preheat oven: to 400°F. Line a baking sheet with parchment.
    2. Make the glaze: In a small bowl, whisk together honey, horseradish, Dijon, lemon juice, and miso until smooth.
    3. Prepare the fish: Pat fillets dry and season lightly with salt and pepper. Place on the prepared baking sheet.
    4. First glaze + bake: Brush a light layer of glaze over each fillet.
      Bake for 5–6 minutes.
    5. Second glaze + finish baking: Remove from oven and brush another layer of glaze over the top.
      Return to oven for another 5–6 minutes, until the fish is just cooked through.
    6. Broil to caramelize: Switch to broil and cook for 2–3 minutes, watching closely, until the glaze bubbles and caramelizes into a glossy finish.


    Serving Notes:
    Serve immediately while the glaze is warm and glossy. A squeeze of fresh lemon or a sprinkle of herbs can brighten the richness if desired.
