Seared halibut cheeks with wild rice, sautéed zucchini on a rustic matte ceramic plate in warm natural light.

Halibut cheeks are one of those cuts that don’t need much to shine.

They cook quickly, stay tender, and take beautifully to a simple butter baste. With just a hot pan, a few ingredients, and a little attention, you’ll end up with something that feels special without being complicated.

Once they’re cooked, they’re ready to serve as-is—or you can build from there depending on what you’re in the mood for.

  • Prep Time:

    5 minutes

  • Cook Time:

    6–8 minutes

  • Total Time:

    10–15 minutes

  • Servings:

    2 servings

  • Ingredients:

    • 1 lb halibut cheeks
    • Salt and pepper
    • 2–3 tablespoons butter
    • 1–2 sprigs fresh thyme
  • Instructions:

    1. Pat the halibut cheeks dry and season lightly with salt and pepper.
    2. Heat a pan over medium heat. Add the butter and let it melt until just starting to foam.
    3. Add the halibut cheeks in a single layer. Let them cook undisturbed for 2–3 minutes, until lightly golden on the bottom.
    4. Flip the cheeks and add the thyme to the pan. Tilt the pan slightly and use a spoon to baste the cheeks with the melted butter as they finish cooking.
    5. Cook for another 2–3 minutes, until the cheeks are opaque, tender, and just cooked through.
    6. Remove from heat and serve immediately.

Once cooked, these are ready to go—or you can turn them into a full meal with just a few additions:

    • Spoon over pasta with a light cream or butter sauce
    • Serve over warm rice with butter, herbs, and a squeeze of lemon
    • Serve over a simple green salad with vinaigrette
    • Plate simply with roasted vegetables and lemon
