Ingredients:
- 1 lb halibut cheeks
- Salt and pepper
- 2–3 tablespoons butter
- 1–2 sprigs fresh thyme

Instructions:
- Pat the halibut cheeks dry and season lightly with salt and pepper.
- Heat a pan over medium heat. Add the butter and let it melt until just starting to foam.
- Add the halibut cheeks in a single layer. Let them cook undisturbed for 2–3 minutes, until lightly golden on the bottom.
- Flip the cheeks and add the thyme to the pan. Tilt the pan slightly and use a spoon to baste the cheeks with the melted butter as they finish cooking.
- Cook for another 2–3 minutes, until the cheeks are opaque, tender, and just cooked through.
- Remove from heat and serve immediately.
