A quick honey garlic marinade brings sweetness and depth, while ginger and a touch of acidity keep everything balanced. Finished with a light drizzle of toasted sesame oil, it’s a simple way to turn halibut into something that feels a little more thoughtful than the effort it takes.

  • Ingredients:

    • 2 halibut portions
    • 2 garlic cloves, minced
    • 1/2 tsp grated fresh ginger (optional but recommended)
    • 3 Tb honey
    • 2 Tb soy sauce
    • 1–2 tsp rice vinegar or fresh lime juice
    • 2–3 Tb olive oil (or neutral oil)
    • Salt and pepper, to taste
    • 1–2 tsp toasted sesame oil (for finishing)
  • Instructions:

    1. Marinate the fish: In a small bowl or container, combine garlic, ginger, honey, soy sauce, rice vinegar (or lime juice), and olive oil. Add the halibut and let marinate for about 20–30 minutes if time allows.
    2. Bake the halibut: Preheat oven to 375°F. Place the halibut on a baking sheet and bake for 8–10 minutes, depending on thickness.
    3. Broil for finish: Turn on the broiler and cook for an additional 3–5 minutes to lightly caramelize the top.
    4. Reduce the sauce: While the fish cooks, pour the remaining marinade into a small saucepan. Bring to a boil, then reduce heat and simmer for 3–5 minutes until slightly thickened.
    5. Finish and serve: Remove halibut from the oven and drizzle with the reduced sauce. Finish with a light drizzle of toasted sesame oil just before serving.

    The extra sauce is just as good over simple vegetables like broccoli, snow peas, mushrooms, or asparagus.
