A rare cut from one of Alaska’s most distinctive whitefish. Yelloweye collars are the meaty, bone-in sections just behind the head, prized for their rich flavor, moisture, and excellent texture when roasted, grilled, or broiled.

Because yelloweye is already a relatively limited fishery, collars are even harder to come by. We save these cuts from the yelloweye we process here in Kodiak, giving us another way to make better use of each fish while offering a specialty portion that is rarely available online.

The meat tucked around the bone stays especially juicy during cooking, making collars a great choice for anyone who enjoys flavorful, hands-on seafood. Season simply and roast until tender, brush with a glaze and broil, or grill over medium heat for lightly charred edges and moist, flaky meat.
