These smoked King Salmon Bellies come from both traditional red-fleshed King Salmon and naturally ivory-fleshed White King Salmon. Because each fish is unique, packages may contain red king bellies, white king bellies, or a combination of both.
Naturally high in oil, the belly section develops an exceptionally rich texture during smoking. The result is tender, flavorful salmon with deep smoke character and a melt-in-your-mouth finish that many salmon lovers consider the best bite on the fish.
