How to Cook It Well

Scallops are tender and naturally sweet, with a delicate texture that cooks very quickly. A hot pan and a short cook time make all the difference.

Cook them just until the outside is golden and the center is opaque but still slightly soft. They should feel tender and springy, not firm or rubbery.

The biggest mistake is overcooking. Scallops only need a minute or two per side—any longer and they lose their softness and become tough.

They do best with a quick, high-heat sear in a pan. Make sure they’re dry before cooking, and give them space so they brown instead of steaming.

  • 3 parts butter
  • 1 part fresh thyme
  • pinch salt

  • 4 parts butter
  • 1 part lemon juice
  • 1 part garlic
  • ½ part dill or parsley

Warm together, then spoon over just before serving.

Lemon Olive Oil Finish

  • 2 parts olive oil
  • 1 part lemon juice
  • pinch salt

Drizzle lightly just before serving

Honey Lime Finish

  • 2 parts honey
  • 2 parts lime juice
  • 1 part olive oil
  • pinch salt
  • add some fresh herbs (cilantro, parsley, mint)

Whisk together and lightly drizzle over just before serving.
