This Smoked Scallop Poke Bowl is a vibrant, fresh dish that combines diced wild Alaska smoked scallops with seasoned rice, avocado, cucumber, and a zesty soy-lime dressing. The smoky scallops add a rich, savory depth to this light yet luxurious meal—perfect for a boutique seafood experience at home.

Ingredients (Serves 2–3):
For the Bowl:

1 cup sushi rice, cooked and seasoned

4 oz. smoked Alaska scallops, diced into small cubes

½ avocado, sliced

½ cup cucumber, thinly sliced

2 tablespoons pickled ginger

1 tablespoon thinly sliced green onion

1 teaspoon sesame seeds

1 sheet nori, cut into thin strips (optional) or you can sprinkle with furikake

Microgreens or sprouts, for garnish
For the Soy-Lime Dressing:

2 tablespoons low-sodium soy sauce

1 tablespoon lime juice

1 teaspoon sesame oil

1 teaspoon honey or maple syrup

½ teaspoon grated fresh ginger
Instructions:
1. Make the Dressing: In a small bowl, whisk together soy sauce, lime juice, sesame oil, honey, and ginger. Set aside.
2. Assemble the Bowl: Divide the seasoned sushi rice between bowls. Arrange diced smoked scallops, avocado, cucumber, pickled ginger, and green onion over the rice.
3. Drizzle & Garnish: Drizzle with the soy-lime dressing. Sprinkle with sesame seeds and nori strips (if using). Garnish with microgreens for a boutique finish.
4. Serve: Enjoy immediately, or refrigerate for up to 2 hours before serving.
