- ½ avocado, sliced
- ½ cup cucumber, thinly sliced
- 2 tablespoons pickled ginger
- 1 tablespoon thinly sliced green onion
- 1 teaspoon sesame seeds
- 1 sheet nori, cut into thin strips (optional) or you can sprinkle with furikake
- Microgreens or sprouts, for garnish
For the Soy-Lime Dressing:
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 teaspoon honey or maple syrup
- ½ teaspoon grated fresh ginger
