Wild Alaskan keta salmon, sometimes called chum, has a name that doesn’t quite match its quality. Don’t let the nickname fool you. When handled with care and smoked slowly, keta becomes a lean, mild, subtly smoky fillet that’s perfect for anyone who prefers a lighter salmon flavor or is new to salmon altogether. Brined in a simple garlic salt mixture and hot-smoked in-house, each piece turns firm, tender, and beautifully balanced.
