 At Kodiak Island Smokehouse, we specialize in premium custom fish processing for sport fishermen, charters, and locals alike. Whether you’ve been fishing the ocean, rivers, or remote streams around Kodiak Island, we’re here to make sure your hard-earned catch is handled with exceptional care — and a personal touch.

We process your wild-caught fish exactly how you want it — from filleting and portioning to vacuum-sealing, labeling, and freezing. Each order is kept completely separate, so the fish you bring in is the fish you get back — never mixed with anyone else’s catch.

To elevate your experience even more, our smoked fish and gravlax come with personalized labels featuring your name. It’s perfect for gifting, or simply celebrating your catch in a memorable way.


When your order is complete, you can:

  • Pick it up frozen from our retail store 
  • Or ship it anywhere in the U.S. using FedEx, UPS, or Alaska Air Cargo

CUSTOM FISH PROCESSING SERVICES IN KODIAK, ALASKA

We offer a range of fish processing services to match your needs — whether you want something simple and fast, or a more hands-on, custom approach. Here’s what we currently offer:

All prices based on incoming weight

FREEZE ONLY

Fast overnight service. You bring in your fish already bagged or vacuum-sealed — we’ll freeze it for you.  

Please note: We do not rinse, trim, cut, label, or vacuum-seal fish under this service.

VACUUM PACK AND FREEZE

Our most popular option. We handle everything for you —
including washing, filleting, trimming, portion cutting (if requested), vacuum-sealing, labeling, and freezing. 


$ 2.00/LB for any fish

$  .25/LB additional for skinning

$  .50/LB additional for small portions (including collars, bellies, strips or any other small pieces)

HOT SMOKING

Premium, in-house hot smoking using our signature brine recipe.
We wash, fillet, trim, brine, and smoke your fish to perfection, then vacuum-seal, label with your name, and freeze the finished product.

A popular option for gifts or charcuterie boards.

$  .25/LB additional for skinning

SALMON GRAVLAX

 A Nordic-style cured salmon — perfect as a cold appetizer or substitute for lox.
We fillet, remove pin bones, cure with salt, sugar, and dill, then portion, vacuum-seal, label, and freeze.

ADDITIONAL POLICIES AND FEES

GROUP SPLIT

$25/per person 

If an order is being split, this fee is applied to each split.

RUSH FEE

A rush fee of $.75/LB will be added to any vacuum pack order that needs to be completed in less than 3 business days and any smoke order that need to be completed in less than 5 business days (subject to availability).

FISH COOLER AND FREEZER STORAGE

 $0.15/lb per day  (subject to availability) 

FISH PROCESSING STORAGE

2 weeks of freezer storage is included in the price of your order.  Anything left in our freezer past 2 weeks will be assessed a storage fee of $.15/LB per day for up to an additional 2 weeks.  At that time, if the order has not been picked up and no other arrangements have been made, the order will be considered abandoned.

ABANDONED ORDERS

Orders that are left at our facility for longer than 30 days will be considered abandoned and will be disposed of.

PICK-UP FEE

A $30 fee will be added to any order that needs to be picked up at a dock or airport.  Arrangements must be made in advance.

AIR CARGO DROP OFF FEE

$30 plus $10 per box.  Arrangements must be made in advance.

AFTER HOURS PICK-UP FEE

A $30 fee will be added to any order that needs to be picked up before/after hours.  Arrangements must be made in advance.

SHIPPING

Shipping services are available upon request through UPS, FedEx, and Alaska Air Cargo. We have a variety of insulated boxes for purchase, which you can pack and ship yourself, or you can entrust us with the process. Customers are responsible for all shipping fees. We only ship Monday through Wednesday.
