Fisherman’s Roll (Gravlax, Avocado & Mustard-Dill Drizzle)

The Fisherman’s Roll brings gravlax back to its roots, pairing silky dill-cured salmon with creamy avocado and finishing it off with a tangy mustard-dill drizzle. It’s rustic, bold, and inspired by the traditional flavors fishermen have long enjoyed with gravlax.

Ingredients (Makes 4 rolls / ~32 pieces)

For the Roll
  • 1 cup sushi rice, rinsed and cooked
  • 2 Tbsp rice vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • 4 sheets nori (seaweed)
  • 6 oz gravlax, thinly sliced (for inside + additional on top, if desired)
  • 1 avocado, sliced into strips
For the Mustard-Dill Drizzle
  • 2 Tbsp Dijon mustard (or grainy mustard for texture)
  • 1 Tbsp mayonnaise
  • 1 tsp honey
  • 1 tsp fresh lemon juice
  • 1 tsp fresh dill, finely chopped
For Garnish
  • Extra dill sprigs
  • Optional: pickled red onions
  • Optional: a few capers scattered across the top

Instructions

  1. Prepare the rice: While still warm, season with rice vinegar, sugar, and salt. Let cool.
  2. Set up: Place a bamboo mat wrapped in plastic on your counter. Lay down a sheet of nori and cover with rice. Flip so rice faces down.
  3. Fill: Lay gravlax and avocado strips across the center.
  4. Roll: Lift the mat edge and roll tightly over the fillings. Continue until sealed.
  5. Top: Slice into 8 pieces. Place thin slices of gravlax over the top of each piece.
  6. Make the drizzle: In a small bowl, whisk together mustard, mayo, honey, lemon juice, and dill until smooth. Drizzle lightly over the roll.
  7. Garnish: Sprinkle with dill sprigs, optional pickled red onions, and capers.
