Fisherman’s Roll (Gravlax, Avocado & Mustard-Dill Drizzle)

The Fisherman’s Roll brings gravlax back to its roots, pairing silky dill-cured salmon with creamy avocado and finishing it off with a tangy mustard-dill drizzle. It’s rustic, bold, and inspired by the traditional flavors fishermen have long enjoyed with gravlax.

Ingredients (Makes 4 rolls / ~32 pieces)
For the Roll

1 cup sushi rice, rinsed and cooked

2 Tbsp rice vinegar

1 tsp sugar

½ tsp salt

4 sheets nori (seaweed)

1 avocado, sliced into strips
For the Mustard-Dill Drizzle

2 Tbsp Dijon mustard (or grainy mustard for texture)

1 Tbsp mayonnaise

1 tsp honey
-
1 tsp fresh lemon juice
-
1 tsp fresh dill, finely chopped
For Garnish

Extra dill sprigs

Optional: pickled red onions

Optional: a few capers scattered across the top
Instructions

Prepare the rice: While still warm, season with rice vinegar, sugar, and salt. Let cool.

Set up: Place a bamboo mat wrapped in plastic on your counter. Lay down a sheet of nori and cover with rice. Flip so rice faces down.

Fill: Lay gravlax and avocado strips across the center.

Roll: Lift the mat edge and roll tightly over the fillings. Continue until sealed.

Top: Slice into 8 pieces. Place thin slices of gravlax over the top of each piece.

Make the drizzle: In a small bowl, whisk together mustard, mayo, honey, lemon juice, and dill until smooth. Drizzle lightly over the roll.

Garnish: Sprinkle with dill sprigs, optional pickled red onions, and capers.
