These numbers tell you how many scallops are in one pound.
10/20 = 10–20 scallops per pound (large; perfect for searing)
20/30 = 20–30 scallops per pound (medium; an all-purpose size)
30/40 = 30–40 scallops per pound (small; great for pastas & chowders)
